Gluten-Free Strawberry Shortcake and GF Oatmeal Cookies

I’ve just tackled Jessie, held her down and tickled her with the cat’s tail until she shed her secrets for the “to die for” strawberry shortcake and oatmeal cookies.  Okay, I didn’t REALLY do that.  She was just in a generous mood.  

Turns out that she’s gotten the shortcake recipe from RecipeZaar.com (her favorite source).  I’ve typed up the recipe and linked it here under the GF Recipe tab as well as to RecipeZaar.com.

The oatmeal cookie recipe is one of our staples around here and Jessie usually has to hide the evidence or else the cookies disappear way too quickly.  Jes says that you can freeze these cookies (I’ll know where to look next time) and that they are also great crumbled onto ice cream.  YUM!

It’s a bad day today

Jessie reported that she slept badly last night and woke up with a terrible headache.  She has that look that leaves no question in my mind.  The tough part is that she’s scheduled to take a biology test with the tutor this afternoon.  Right now, I don’t see it happening unless the headache lets up a bit.  

I added something new to the slowly growing recipe list this morning.  It’s called Bucatini All’Amatriciana with Spicy Mozzarella and Meatballs.  Translation = Spaghetti and Meatballs.  Once again, I got it from Giada on Food Network.com and adapted it as a gluten-free menu.  It was very good and not at all difficult.  At first I though I couldn’t make it because the meatballs called for breadcrumbs, but I got some gluten-free bread, toasted it up and next thing I new, I had GF breadcrumbs.  Try it if you’re in the mood for some good authentic Italian food.

Delicious Gluten-Free Chewy Chocolate Chip Cookies



I got the 411 on Jessie’s chocolate chip cookies.  After tasting one this morning, I will verify that they are WONDERFUL.  I can only imagine just how good they were last night, hot out of the oven.  
They DO NOT taste like your basic gluten-free cookie.

Turns out that she found the recipe on Food Network, Alton Brown.  You can click the link or pull up the easily printable version that I’ve typed up by clicking on my recipe tab.  Jessie tweaked two things with the recipe and I’ve included the original version and her tweak in our recipe.  

Enjoy with a tall, ice-cold glass of milk. YUM.

Gluten-Free Corn Chowder and Southern Cornbread

Click on the recipe tab across the top or directly to your right.  I’ve just added one of our household staples, gluten-free corn chowder.  Combine it with the gluten-free southern cornbread and a salad and you’ve got a terrific meal in less than an hour.  It’s warm comfort on those cold February evenings.  This one rocks.  Enjoy!
